Making this post so more people are aware of this bug and in hopes that Nintendo themselves patches this or someone makes a mod that restores the functionality.
So in the original DKCR on the Wii when two players would go to bounce on an enemy, they both would get a bounce for a short amount of time so both players could get through the level even when it required precision platforming. They removed this feature from the 3DS version of the game as well which is what the Switch port is based...
