This works! Dump Fortnite save, change settings in the .ini file to your liking, save, make file Read-only, restore the save into your switch, done.
I dumped my Fortnite save using Checkpoint because I had a slight hope that the file would contain the game's settings. Surely enough, it does. I changed UnlockFPS to true, ShowFPS to true, and Vsync to false. I saved it and restored the save using Checkpoint again, and it didn't work as far as I can tell. The game sticks...
